Crock Pot Potato Soup

February 15, 2012

I found this recipe last week and it could NOT be easier or yummier. The soup itself contains about 4 ingredients (not including seasonings & toppings) and just cooks all by itself in the crock pot. I didn't take a lot of pictures for this post, only because there wasn't much to do!

Here is what everything looked like when combined in the crock pot and cooked for 7 hours. This is the hashbrowns, cream of chicken soup, chicken broth, cream cheese, and seasonings.

The finished product ready to eat!

Crock Pot Potato Soup, adapted from Pearls, Handcuffs, and Happy Hour

1 30 oz bag of frozen, shredded hash browns (Ore-Ida worked well)
3 14.5 oz cans of chicken broth
1 can cream of chicken soup
1 1/2 blocks of cream cheese (8 oz), softened
Garlic powder, salt, pepper to taste

In a crock pot, combine everything except the cream cheese. Cook for 6-8 hours on low heat. About 1 hour before serving, add the softened cream cheese and keep heated until thoroughly melted. Serve with cheese, sour cream, bacon bits, green onions, etc as toppings.

Splurge v. Steal: Chartreuse Love

February 7, 2012

So I've been obsessing over this Cynthia Rowley dress from Anthropologie for a while now. While I'm loving the color and style, I'm not really loving the $398 price tag.

Imagine my excitement when I came across this lookalike on Old Navy's website last weekend. FOR $34.94!!

Now clearly I understand that the quality of the Old Navy dress will be nowhere near the same as the Cynthia Rowley version...and there are a few differences (cuffed sleeves, different waist). Overall though, I think this is a pretty good option. The color is the same, the length is about the same, and the sleeve length is pretty close too. And best of all, it saves about $363. I'll be placing my order very soon!

Trip to MN

February 6, 2012

Back in January B and I made the trip up to Minneapolis to visit some friends, including 3 of my lovely bridesmaids! We also got to meet Nicole & Seth's little one while we were there and check out their super cute house. Such a fun weekend, just too short as always. :) Also kinda sad we forgot to get a group picture, but there's always the wedding for that!

Me & Baby Brooke, she is so sweet!

Nicole & Seth's fur baby Hallie, isn't she the cutest?

Random pic at IKEA on the way out of town, B was OBSESSED with these cowhide rugs. Um no.
