Lemon Alfredo w/ Chicken & Crispy Prosciutto

This is a new favorite recipe, found on the fabulous website Plain Chicken. Not only is this pasta dish delicious, it also looks *way* fancier than it really is. The ingredients (rotisserie chicken, store bought alfredo sauce) cut your cooking time way down, and makes this easy to put into the weeknight rotation.

 {Ingredients include greek seasoning, bowtie pasta, lemon juice, alfredo sauce...}

 {...and chopped up chicken and prosciutto}

{While the pasta is cooking, saute the prosciutto in olive oil until crispy}

 {Put aside on a paper towel to drain}

 {Add chicken, seasonings, alfredo, and lemon juice}

{Toss the pasta and sauce together, then top with crispy prosciutto and shredded parmesan}


Lemon Alfredo w/ Chicken & Prosciutto
adapted ever so slightly from Plain Chicken

16 oz bow tie or farfalle pasta, cooked and drained
3 oz prosciutto
2 tsp olive oil
1/2 rotisserie chicken, meat pulled and shredded
1 tsp Greek seasoning
1 tsp minced garlic
Juice of 1 lemon
1 (24 oz) jar of alfredo sauce
Shredded parmesan cheese

Cook pasta according to package directions.

While pasta is cooking, heat oil in skillet and saute prosciutto until crispy, about 5 minutes.  Remove from pan and set aside.

Add cooked chicken to skillet over medium heat.  Sprinkle with Greek seasoning and add minced garlic.  Cook for about 30 seconds and add Alfredo sauce and lemon juice.  Stir to combine and keep warm over low heat.

Toss cooked pasta with lemon Alfredo sauce.  Serve pasta topped with the crispy prosciutto and shredded parmesan cheese.
